I have not updated this blog or my <a href="http://littlemisskessa.com/" target="_blank"><b><i><span style="color: purple;">other blog</span></i></b></a> because I have been a little busy with the new venture that I sank my teeth into. I started meal prepping about a month ago and I was able to influence my Uncle to try it too. I cooked for the two of us and it didn't take long before his officemate took notice and asked if they can order food from me too. I thought long and hard about it and finally decided to bit the bullet and we are almost done with Week 3 of our meal delivery. </div>

Just to give you a little background, I love cooking and baking but I have no formal degree in culinary or food technology nor am I a dietitian. I, however, have the basic knowledge of food preparation because my mom teaches food technology and baking in a state university. I have also attended a few classes in Enderun Collages (preparing 5-course meal, macaron making, among others). I also had an extensive discussion about food and the benefits of choosing food/ingredients with low glycemic index with a dietitian at the St. Luke's Medical Center - Global City when I was pregnant with my daughter because I had gestational diabetes. Apart from the scenarios listed above, I am such a voracious reader online and offline that I have done research and still doing research on food pairings and flavors, use of herbs and spices, use of grains apart from rice, and I also love experimenting my way in the kitchen. </div>

I still remember winning cooking contests in my elementary and high school years. I have also often volunteered to cook for the Girl Scouts in my school in high school when we go camping. When I was younger, I would watch as my mom patiently pipe icing and make sugar flowers for wedding cake commission works. She did it old school without the requisite stand mixers used today. </div>

I've never really envisioned myself to become a chef but when I watch Masterchef, I try to remember the techniques applied and the advises given by the mentors/judges. I dream of joining a Masterchef competition in the Philippines also but I don't think I will ever win because first I don't have a sob story and second the winner would oftentimes be the result of text votes. Heck, it's a money game that's considered instead of the expertise, progression, and skills of the cook. Maybe if we ever decide to move to Denmark in the future then I can join Masterchef Danmark. For now, I'd take my time and practice and learn how to perfectly julienne a carrot or cucumber using only the knife. </div>

Imagine my happiness now that I get to play not just the role of an executive chef but also a sous chef, a dietitian, a dishwasher, an expeditor, a line cook and a caller? I'm just glad that my uncle takes care of the delivery to his officemates in one of the offices in Makati. All the other orders are delivered via GrabExpress until I find a delivery guy that would handle all our deliveries.</div>

Life really has a nice way of surprising and challenging you and this is my big surprise this year. Having a business like this is not part of my 2017 goals list but I love a little challenge every once in a while so this is the perfect challenge to grab and go. </div>

I responded to her that she should respect my choice but she said that she won't respect my choice because she's the voice of the silenced. I was dumbfounded! How could she impose her beliefs to me when in fact we don't even know each other and besides she's not the one who's paying for my meals?<br />

I'm posting her profile - the lady who disrespected me and my cooking and my choice to advance her cause and to be the voice of the "lechon" I have eaten in the past and in my future. Yes, she did not manage to change my diet preference because she was too offensive and I do not deserve to be ridiculed the way she did. It might be no biggie for you but I felt attacked.<br />

She even had the guts to say <i><b>"we will not allow humans like you to continue to oppress others just for your selfish palatable pleasure"</b></i>. Oh c'mon, how can you convince other people to convert to veganism when you ridicule instead of encourage, when you attack instead of educate, when you disrespect instead of listen? I'm not sure if she even thinks about the balance of the ecosystem every time she lectures people and shoves down her belief and practices down people's throats.<br />
<br />
She can eat her vegan meats, I'd order or cook and eat my beef/pork/fish dish anytime I want. And yes, I am not answerable to anyone because I have my own choice. If you can't handle my choice then so be it. Once she's tired being on her pedestal of her higher moral ground, I can share my meat recipes to her. Maybe I should tag her in my photos?<br />

I think what I have an issue with is her having the holier than thou attitude about her being vegan. In the same way that she defines everyone that is not vegan as selfish meat-eating and cruel individuals and she feels that it is her holy duty to spread to the world that veganism is the way to go.<br />

My favorite spice now is turmeric because it makes food taste delectable that can satisfy your taste buds. Turmeric is also known a curcuma longa and very closely-related to ginger. While we were watching a volleyball tournament on TV, I mentioned to my uncle that I am going to cook chicken with squash for dinner. He immediately shushed me and told me that the combination can cause leprosy? I'm sure I heard it before from our old folks but I'm not convinced. How can the lowly chicken and vitamin-rich squash cause leprosy? Leprosy is caused by a certain strain of bacteria, right? I told him it might just be an old wives tale but I got curious. </div>

I don't schedule on weekends because I'm normally busier on these days. </div>

The last time that I was in a Yankee Candle was in Sweden so I was ecstatic when I saw the new Yankee Candle Store at the Uptown Mall. I have seen the damage that the recent Surigao earthquake has caused and to say that I am scared of the possible effects of the West Valley Fault quake is scaring the s**t out of me. THE EAST AND WEST VALLEY FAULT</h1>
There are several cities and towns that are within the scope of the 100-kilometer West Valley Fault and may experience quakes of up to magnitude 7.2. That's enough to topple down houses and other tall structures and even cause cracks in concrete establishments. Just the thought of the shaking and aftershocks sends shivers down my spine. On the other hand, areas affected by the 10-kilometer East Valley Fault will experience a magnitude 6.2 quake.<br />
<br />
According to Phivolcs Director Renato Solidum, the West Valley Fault moves roughly every 400 years and the last major movement happened way back in 1658 which is around 350 years ago. The "<b>Big One</b>" is bound to happen in our lifetime.<br />

PREPARING FOR THE BIG ONE</h1>
The recent Surigao earthquake had a magnitude of 6.7 and by the looks of it the "Big One" is indeed bigger than what happened recently. There will be more damages as the West Valley and East Valley faults are both in highly-urbanized areas.<br />

I'm not really sure if our building is earthquake-proof so I am going to prepare. I have actually planned to assemble our family go-bag but for some reason, I always put it off. Now that earthquakes are happening almost every day in the Philippines, I feel that putting off this task would be costly for me and for my family in the future. I also wrote this blog so I can spread the word and attempt to convince you to be prepared as well.<br />

Generally, there are three types of emergency kits:<br />
<ul>
<li>household disaster supplies - with enough stock to last until things return to normal</li>
<li>a go-bag or bug-out bag - with a kit to aid should an evacuation is necessary </li>
<li>get-home bag - with a kit that will help you get home as soon as possible during an emergency</li>
</ul>

A go-bag can actually be used not only when an earthquake strikes. It can also be used when there is fire or when there is flooding. It will be a handy kit for when any disaster is at hand.</div>

WHAT IS A GO-BAG? Things To Know</h1>

1. Your go-bag should be a backpack that is easy to carry. Choose a light yet sturdy one as you might need to carry these bag on foot when evacuating. </div>

<div>
2. Each person in the household, old enough to carry a backpack, should have their own bag. Carefully curate the adult bag contents as well as the kiddie bag contents.</div>
<div>
<br /></div>
<div>
3. The bag should be roomy enough to hold a few day's worth of supplies (ideally at least 72 hours) but small enough to be manageable and practical. </div>
<div>
<br /></div>
<div>
4. As much as possible, pick and choose a waterproof bag. Keep things organized and stored in zip-lock baggies as well. You'll never know if it will rain when evacuating. </div>
<div>
<br /></div>
<div>
5. Strategically, put the go-bags in an accessible area in your house. Do not put it in a locked box or cabinet as time is very important when a disaster strikes. If possible, make go-bags to store in your car, in your workplace and another in your house. </div>

<li>drinking water bottle - 1 liter capacity (in case you ran out of water)</li>

If the items above won't fit in your bag, make sure to keep a printed list of all the necessary items in case you need to grab everything you need before you go. Ensure that your bag contains only the absolute essentials - the non-negotiables. You can also fill your pockets with food before leaving your house. </div>

Check your bag at least every six (6) months to make sure that nothing has expired. You can use up expiring food and replace with new stocks. Check if extra clothing still fits as well (especially for young children who easily outgrow their sizes). </div>

Most of us, working in offices or working from home, are pretty busy to be quite fair. We all feel like we have so much on our plates and so we sometimes take shortcuts and we sacrifice the time allotted for cooking our meals - healthy meals. I bought microwavable containers, color-coded for breakfast, lunch, and dinner (I can be OC like that). I bought vegetables, fish, and ground pork as well. I spent less than Php1000 for everything. That's a bit cheaper than ordering from calorie-counted meal delivery plan service. I'll polish my grocery list next time and I am sure that I will save more. </div>

I used plastic meal containers for now but I plan to invest in glass containers so I could use it longer and the food quality will be maintained while stored inside the fridge. I'll probably also keep my meal preps to 3 days as I find it manageable. Eating the same food for more than 4 days would be too much to my taste already.<br />

It took me a total of a little over 3 hours to wash, slice, cook and arrange the food in the containers. I plan to do it a little bit faster next time by organizing my work table and being more efficient with my <i>mise en place</i>.<br />

As you can see in the photo above, I did not include the snacks yet but after we had dinner, I decided to snack on watermelon tomorrow. I have yet to decide what to snack on on Friday and Saturday. I'm not forcing myself to do more than what I can do because I don't want to feel pressure early on. I am just taking this lifestyle change one step at a time and strive for continuity rather than crash and burn.<br />

Okay, so you might be wondering what the title of this blog post is all about. It's actually a statement uttered to me by an employee at a government agency where I transacted a claim this morning. I didn't know how to react after I heard him say it. That was after I returned my papers to him to reevaluate because he did not approve my application for reimbursement because he said I lack a document. </div>

Let's rewind the story a bit. I went to the same government agency last week to submit my medical documents and I was advised to return back after a week. Apparently, that is how long it would take for them to evaluate a stack of documents that has six (6) pages in all. I did not complain and in fact, I did not voice out my concern. I complied and returned today. I sat down in front of the documents receiver and she informed me that my medical documents were declined because I lack one important document. She said I needed to submit a <b>dilation & curettage procedure report</b>. I told her that I did not undergo the procedure and my medical certificate specifically noted that. She asked me to go to a certain cubicle and present my documents again to the doctor. </div>

I entered the doctor's cubicle and I submitted my papers to his desk and asked why my papers were not approved in a very polite and inquiring way. He briefly scanned the documents and told me that he needed to see the D& C report. I told him that I could not pass the document because I did not undergo said procedure as my miscarriage was considered to be a complete non-induced abortion. He looked at me and said, "<b><i>I'm a doctor so I know.</i></b>" I did not know how to react. I didn't think it was necessary for him to shove to my face that he was a doctor. If he knew, why would he disapprove my application in the first place? Did he even scan all the documents I attached including the medical certificate signed by my OB-Gyne noting that I did not undergo the D&C procedure because it was not needed for my case? I actually thought the 7 days wait time for them to process my papers was too long already. I thought they would use that time to check the authenticity of the documents by calling the hospital. He further scanned my documents for a couple of minutes noting the date of my first ultrasound confirming the pregnancy and the last ultrasound noting that there was no sign of pregnancy anymore. It took him 2 minutes or 3 minutes tops. He approved my papers in front of me. </div>

Can somebody remind me again why is there a need to wait for 7 days, when in fact, he can simply scan my papers and approve it in under 5 minutes? </div>

Anyway, I didn't respond negatively to him. I just needed my documents signed so I can go to the next step. The next step is another story and I will wait until I finish the whole process before I share my entire SSS reimbursement experience. This situation reminds me of the fact why I hate transacting with government agencies/institutions. They always find a way to make you feel like you deserve all the wait time and all the hassle. Apparently, our government agencies are a pro at providing this level of service. </div>

After the SSS transaction, I walked about 3 blocks away and went inside the Pag-Ibig/HDMF office and I was shocked at how many people were inside. There were no less than 300 people if I'm not mistaken. I lined up to speak with one of the front liners and there were around 50 people in front of me. I was too tired and too hungry when it was my turn already so I only managed to request for the forms I needed to accomplish so I continue being a voluntary member and decided to just come back another day.</div>

I guess I'll use a few days to think if I really need to continue being a member or just forget that this government agency ever exists. Or maybe I'll use a few days teaching myself to be extra patient because after all, I live in a 3rd world country where automation of transactions so citizens can enjoy the benefit of advanced technology, is not a primary consideration. I hope and pray that the national ID system will be implemented and that paperless transactions will be the norm soon. </div>

I mentioned in the blog yesterday that we stopped by Estrel's in Quezon City after our appointment at the <a href="https://theteatimewriter.blogspot.com/2017/02/delonghi-philippines-concept-specialist.html"><b><i><span style="color: purple;">De'Longhi showroom</span></i></b></a>. We were hoping that we would be able to buy a generic cake but we were told that they already ran out before noon because there were so many walk-ins that day considering it was a weekend (Saturday). I asked if I can place an order for a made-to-order cake to be picked up the next day but I was told that the cake will be available Sunday afternoon. Ugh! We need it in the morning because we will be bringing it to Cavite so I opted to come back early this morning.<br />

We woke up really early today because we had to pick-up the cake at Estrel's bakeshop. We just left it to chance and hopefully, we can be early enough to buy one of their generic cakes. And sure we did! We were there at 8 in the morning but decided to wait at the nearby gasoline station since the bakeshop was still closed. We returned after 30 minutes and there was a line already. I can't believe how this bakeshop managed to attract a steady stream of clientele since 1949. We got the cake and paid Php700 for the 8-inch round cake with pastel mini flowers scattered all over. The cake was very simple and it has a subtle elegance to it. So I guess, it's true what they say, simplicity is beauty. Each cake is made up of two layers of chiffon, caramel filling, caramel icing and piped flowers. It looks old school - unlike all the bells and whistles of current cake design trends.<br />
<br />
We ordered the variety with filling <i>para lasang-lasa ang caramel</i>. The cake was delicious but I would have preferred it to be a little bit sweeter. <i>Medyo matabang sya</i> for my taste. It tasted fresh too because Estrel's bake their cakes on the same day. Everyone enjoyed the cake though and we managed to eat it all in less than an hour. I just wish they have a branch in Makati so I can order again without the hassle of going to Quezon City.<br />

I was not able to take a photo at the store because I was a bit underwhelmed that the bakeshop did not have cakes on display. There were only boxes of desserts displayed inside a glass case such as food for the gods, baked leche flan, apple squares and chocolate chip walnut cookies. Since I am a big fan of food for the gods, I decided to buy a box and compare it with my favorite from Mary Grace.<br />

There was a table adjacent to the dessert display case where employees take orders for their much-raved caramel cake. They show photos through an iPad as they discuss the dimensions, additional cake decor, prices and pick-up dates. I'm not sure if this is a business strategy because their order process really makes their cake more wanted thus probably increasing the demand. According to their website, in order to maintain quality, they only operate in one kitchen and it's only recently that they started baking a limited number of round cakes to cater to walk-in clients.<br />

The bakeshop is located at the corner of Scout Tobias and Scout Limbaga Streets, Brgy. Laging Handa in Quezon City. They are open all day including holidays from 8:30AM to 7:00PM but closes earlier on Sundays at 5:00PM. Estrel's pride itself in producing cakes using only fresh ingredients with no preservatives that's why they recommend consuming the cake on the same day but can be refrigerated for up to two days.<br />

I love how shiny the caramel icing is. The caramel glaze is expertly distributed around the layers of chiffon cake. You can taste the caramel in every bite because it's quite generous. It's so decadent. I can't stop shoving the cake fork into my mouth. If I am mindlessly eating the cake in front of the television, I could probably eat all of the 8-inch cake. You won't feel guilty at all because it's not that sweet at all.<br />

Is the Php700 price worth it? I personally think it is but I think it would not hurt their business if they decrease their price for the 8-inch cake to about Php500. Would I repurchase? YES, only because I think the caramel tastes so decadent and the chiffon is light and fluffy. It's a perfect dessert without feeling too guilty.<br />

We went to their office a little over past noon and we were greeted with delightful smiles and accommodating atmosphere. We were offered coffee and since I have been wanting to taste their cappuccino again, I did accept the offer. It was as expected super yummy! I love it! I like it better than the one I usually buy from my regular coffee shop. Hubby requested for americano and Uncle Don requested for cappuccino as well. </div>

We left after finishing our coffee and we headed to Estrel's to order a cake to bring for tomorrow's pool party. Unfortunately, the cakes allotted for walk-ins was all sold out. We were advised to come back early in the morning tomorrow to buy the cake. Hopefully, we would be there as soon as their doors open at 8:30AM. I did not order the cake with roses because they require several days lead time due to the many orders they receive on a daily basis. Let's see if I would love this much-talked about cake. We had a simple brunch today - bottle gourd with mackerel and tomato sauce, <i class="">bagnet</i> (crispy air dried pork) with mustard leaves, <i class="">mongo</i> soup, <i>palitaw</i>, and papaya slices. I'm not yet sleepy yet so I'll probably stay up a bit longer and plan what we will do tomorrow. We planned to watch Fifty Shades Darker but I'm not so keen at braving the weekend crown at the malls. Maybe we'll schedule it on Monday. I'll keep y'all posted! Ciao for now.<br />

This blog space was born today, February 10, 2017. When I started my main blog, I only knew the basics of blogging and now that I know better than what I knew almost nine years ago, I am going to attempt to start a new space. It will be more personal, more honest, more candid. It will contain anecdotes, observations, and stories. I may even share some gossip who knows? Of course, I'll share my tea finds too, of course!
